- 1/2 cup Peas (Boiled)
- 1/2 cup Onion (Finely chopped)
- 1/2 cup Carrot (Finely chopped)
- 3/4 cup Bell pepper (Green & Red) (Finely chopped)
- 1/2 tsp Fresh Ginger paste
- 1 tsp Rock Salt (For stuffing)
- 1/2 cup Fresh coriander leaves (Finely Chopped)
- 2-3 Fresh green chillies(Finely Chopped)
- as needed Cooking oil (For paratha)
- Spices for stuffing
- 1 tsp Coriander seeds
- 2 Cardamom (Elaichi) Pods
- 2 Cloves(Laung)
- 3 Whole Black Peppercorns
- 4-5 Dry red chilles
- 1 Tsp Carom seeds(Ajwain)
- 1 Cinnamon stick
Steps to make to make Veg Mughlai Paratha
- For the dough: mix all the ingredients mentioned under dough section and add water to make a soft and smooth dough.
- Keep it aside by greasing oil & covering using a cloth.
- Dry Roast Spices mentioned under "Spices for stuffing" section till the aroma wafts in air & grind into powder.
- Heat oil, add onion once golden brown add other veggies,spices & cook properly. Let it cool down on room temperature.
- Roll the dough, fill the stuffing in centre. Carefully fold the sides to give it square shape.
- Shallow fry in oil or butter from both sides till golden brown.
- Serve with homemade tomato-onion chutney & coriander-mint chutney.
